Ink in version 5 is too sensitive
In GoodNotes 5, the ink in the fountain pen is too sensitive. More pressure makes the line much thicker than in version 4. And less pressure makes the line much thinner than in version 4. In version 4, the range of the ink thickness was much narrower. I would use ballpoint pen mode but that has no pressure sensitivity at all. Essentially I would love some option for a little pressure sensitivity but not too much. Can you please make that happen? In the meantime I will keep using version 4. Thank you!

Please allow an option to turn of pressure detection on the Apple Pencil I still use GN4 just for this reason

This is why I prefer Notability now. GN5's writing experience is inferior especially with the smoothing.

I agree. I even would go farther and wish there would be an option to turn off pressure sensitivity. The fountain pen looks awesome when you write with your finger so without pressure sensitivity. With Apple Pencil it‘s just another brush pen, which I personally don’t like at all. Makes no sense to offer a fountain pen, that doesn’t look like one. I added a picture to make it clearer...
I’m also using Noteshelf which has a fountain pen like this without pressure sensitivity and this feels much more natural and looks much better. PLEASE add this feature to Goodnotes, then I could switch over completely!
