A way to do it is to invert colours.
If you go to the options in settings, you can invert colours and have everything that is white changed to black. The problem is that every other colour gets changed to the one opposite on the colour-spectrum (eg: red becomes light blue).
The goodnotes developers should find a way to invert the colour only inside of the app: this would be a cheap way of getting a "completely" dark mode.
