An error occurred while saving the comment Mehmet Akyüz commented+1. GoodNotes is the best iPad app I could find for white-boarding while sharing the screen over video chat. Working with pages is very limiting.
Infinite pages could be a specific type of item, such as QuickNotes. It could be a Whiteboard item or something.

EDIT: I've just realised this is possible. Once you draw the shape, you just have to switch to Shape Tool and select the shape. Then it displays anchor nodes around the shape, allowing you to resize the shape as you like.

I've been a fan of Good Notes in a very short amount of time, but this is a key missing feature. I was surprised to see that I wasn't able to resize selected shapes (rectangles, circles etc) freely. Resize feature always tries to keep the aspect ratio.
