YESSS. I'm so tired of adding text as a title to a document and then accidentally lassoing it to move something else. SO ANNOYING.

You actually have that ability now. I personally use the iFont app to find free custom fonts and download them onto my iPad. Once they're downloaded, they should show up on the Goodnotes app. If they don't show up, try closing Goodnotes and opening it back up. Hope this helps!
